Crudité all the way!

What is crudité, anyway? An appetizer of raw veggies before a meal and in scientific terms we can call them prebiotics.

Prebiotics are a type of non-digestible fiber compound. Similar to other high-fiber foods, some prebiotic compounds are found in foods like garlic, Jerusalem artichokes, jicama, and dandelion greens.

So before you go and grab some raw garlic before every meal, I have other less smelly ideas for you.

1. Pre-cut jicama: Grab a package of these next time you are at the store, eat them sooner or later and add with a bit of guacamole prior to a meal. Or if you are courageous and ready to peel and chop, grab the Spanish potato-turnip root vegetable add a squeeze of lime and a dash of cayenne pepper. I just brought jicama for a chip substitution for friends and it was a hit.

2. Your favorite veggie slices: Grab a carrot, red bell pepper, radishes or snap peas and enjoy a few as you are preparing dinner. These raw vegetables will give your body some nutrition and hydration prior to the meal.

4. Chicory Root hot drink: I LOVEE coffee but my nervous system doesn’t appreciate it. Instead, try this hot drink made of organic chicory root prior to a meal.

5. Majestic Garlic: Keep your eye out for this brand of garlic dip. Even if you don’t love garlic or are a bit sensitive like me, you may be ok with a couple bites every now and then.
